About our cake artist
Located in beautiful island town Enniskillen co.Fermanagh, ireland, Lough Erne Cakes is run by qualified professional pastry chef Baiba Lauze. Baiba has over twenty years experience in baking and specialises in deliciously different cakes for all occasions. She has honed her skills working in the world famous Lough Erne Golf Resort, and has gained a considerable reputation in her field.
Baiba was invited to study at the International Culinary School in Paris where she trained with world renowned master chocolatier, Bruno Couret. She was the only chef from Northern Ireland invited to this exclusive and highly respected school and there she added to her repertoire with mouth-watering French-style cakes and intricate chocolate work.
Lough Erne Cakes have participated in major competitions like ChefSkills at IFEX. In February 2011 Baiba was awarded a medal for her own original recipe Layered Chocolate and Praline Cake, which is a best-seller that has to be tasted to be believed!
Now focusing on wedding cakes, Lough Erne Cakes team have been nominated and won several awards in the Northern Ireland wedding industry.
Since the covid, we have to moved to our private cake studio and it gives us more time to focus on wedding designs and teaching.
