Who we are

Hello, and welcome! I'm Baiba, the heart and hands behind Lough Erne Cakes.

I moved to Northern Ireland 24 years ago, and it quickly became home—a place where my passion for pastry and cake artistry truly flourished. My journey began in the world of fine dining, training as a pastry chef in a prestigious 5-star hotel. But my love for cake decorating soon took over, and 14 years ago, I swapped late-night restaurant rushes for sugar, fondant, and wedding magic!

Over the years, I’ve had the privilege of training with some of the finest pastry chefs and cake artists across Europe, competing in cake competitions, and showcasing my designs at international cake shows. Every cake I create is made with love, a sprinkle of perfectionism, and just a tiny bit of obsessive attention to detail (okay… maybe more than a tiny bit!).

Beyond cakes, I’m a proud mum of five and a grandmother to three amazing granddaughters. Life is always busy, but I wouldn’t have it any other way! When I’m not covered in flour or adding the final touches to a masterpiece, you’ll probably find me listening to music or planning my next adventure—because there’s always somewhere new calling my name.

Recently, I also started my teaching business Baiba Lauzè Cake studio & school, developing recipes and helping home bakers become more confident in their skills. Seeing others grow and succeed in baking brings me so much joy (and makes me feel slightly less guilty about my ever-growing collection of cake tools!).
